Bignè with smoked salmon



The Italian word “bignè” translates to “profiterole” or “cream puff” in English. Bignè refers to a type of pastry made from choux dough, which is light and airy. They are typically filled with cream, custard, or other sweet fillings and can be served plain or drizzled with chocolate, but you can also, like in this recipe, fill them with savory ingredients.

Ingredients

  • For the bigne’ follow this link
  • 300 gr. Smoked salmon.
  • 150 gr. soft cheese (Philadelphia cheese is perfect)
  • 20 gr. Chive.
  • Pepper.

Method

  • Mix the cheese and the chopped chive together.
  • Season with pepper.
  • Cut in half the bignè, fill them with a teaspoon of cheese and a bit of smoked salmon.
