Aubergine sauce

Ingredients:

  • 1 big aubergine
  • 1 tablespoon of onion
  • 1/2 garlic clove
  • Olive oil
  • Salt and pepper

Method:

  • Prick the aubergine with a fork and bake it in a hot oven.
  • When it is soft, cool and peel it carefully.
  • Chop the aubergine and put it into a blender until it become a pulp.
  • Gradually add the onion, the garlic, and the lemon juice and continue blending until it becomes soft.
  • Season with salt and pepper to taste.
