Bolognese sauce

  • 500 gr. of Minced beef.
  • 200 rg. of minced pork.
  • 100 gr. of Bacon (not smoked).
  • 5 Cl. of Extra vergin Olive Oil.
  • 10 Cl. of red wine.
  • 1 Carrot.
  • 1 Selery.
  • 1 Onion.
  • 1 Garnished bouquet (parsley,thyme,bay leaf).
  • 50 gr. of tomato paste.
  • Broth
  • Salt and pepper.


  • Clean and chop the carrots,the onion,the selery and the bacon.
  • Put in a casserole the bacon, let it get brown for a couple of minutes then add the vegetables and cook for 10 minutes on a very low fire.
  • In a pan, greased with a drop of oil, brown both the meat.
  • Add the meat to the vegetables and mix well until is dry.
  • When this mixture looks dry, pour the wine and let it evaporate, add the tomato paste, cover with the broth and cook on a low fire for at least 2-2,5 hours.
  • Check it and in case it gets too dry just add some more broth or water.

The sauce is now ready, use it dress any kind of pasta, to make lasagne or simply taste it with some bread or polenta.
