Ingredients for about 300 gr of mayonnaise:

  • 2 Eggs (room temperature)
  • 250 ml. seed oil (sunflower is fine) room temperature
  • 1/2 lemon juice
  • 1 teaspoon of white wine vinegar
  • Salt and pepper


  • Separate the yolks from the white (do it very well, no traces of white should be in).(1)
  • Place the yolks in a bowl with a pinch of salt and pepper.(2)
  • Add the vinegar.(3)

  • Start beating the eggs for 3-4 minutes with an electric beater (medium speed) adding the oil drop by drop.(4-5-6)

  • Mix continuosly until the oil is finished and the mayo will be dense.(7)
  • At this point add the lemon juice (always beating).(8)

  • Salt and pepper to taste.

Using olive oil instead seed oil it will give a more intense taste to the sauce.
