Mayonnaise

Ingredients for about 300 gr of mayonnaise:
- 2 Eggs (room temperature)
- 250 ml. seed oil (sunflower is fine) room temperature
- 1/2 lemon juice
- 1 teaspoon of white wine vinegar
- Salt and pepper
Method:
- Separate the yolks from the white (do it very well, no traces of white should be in).(1)
- Place the yolks in a bowl with a pinch of salt and pepper.(2)
- Add the vinegar.(3)

- Start beating the eggs for 3-4 minutes with an electric beater (medium speed) adding the oil drop by drop.(4-5-6)

- Mix continuosly until the oil is finished and the mayo will be dense.(7)
- At this point add the lemon juice (always beating).(8)

- Salt and pepper to taste.
Using olive oil instead seed oil it will give a more intense taste to the sauce.
