Mullets in white wine sauce

Ingredients:
- 6 mullet about 120 gr. each
- 1 glass of white wine
- 3 tablespoons of parsley
- 1 garlic clove
- 2 tablespoon of breadcrumb
- 5 tablespoons of olive oil
- Grated lime zest (1/2 lime)
- Salt and pepper
Method:
- Chop the parsley and the garlic and fry them gently in the oil for 2-3 minutes.
- Clean the mullets, place them in the pan and cook for 3 minutes each side, salt and pepper.
- Add half of the wine and let it cook for another 3-4 minutes.
- Remove the fish from the pan, add the rest of the wine and reduce the sauce.
- Toast the breadcrumbs in a small pan (no oil required) until light brown.
- When the wine sauce is reduced, pour (very hot) on the fish, sprinkle the toasted breadcrumb and the lime zest.
- Serve with some fresh salad.
