Octopus salad

Ingredients:

  • 1 octopus (about 1 Kg.)
  • 200 gr. of potatoes
  • 1 sprig of parsley
  • 1 clove of garlic
  • Salt, pepper, extra vergin olive oil

Method:

  • Cook the octopus in boiling water for 45 minutes/ 1 hour /check when it is tender)
  • Boil the potatoes, peel them and dice them.
  • When the octopus is ready, peel the thin skin and cut it in pieces
  • Mix it with the potatoes, season with some chopped parsley, garlic, olive oil, salt and pepper and serve when still warm.
