Octopus salad

Ingredients:
- 1 octopus (about 1 Kg.)
- 200 gr. of potatoes
- 1 sprig of parsley
- 1 clove of garlic
- Salt, pepper, extra vergin olive oil
Method:
- Cook the octopus in boiling water for 45 minutes/ 1 hour /check when it is tender)
- Boil the potatoes, peel them and dice them.
- When the octopus is ready, peel the thin skin and cut it in pieces
- Mix it with the potatoes, season with some chopped parsley, garlic, olive oil, salt and pepper and serve when still warm.
