Lamb chops with pistachios and pecorino cheese

  • 16 Lamb chops
  • 4 Tablespoons of breadcrumbs
  • 2-3 spoons of grated pecorino cheese
  • 80 gr. of pistachios
  • 2 Spoons of chopped parsley
  • 2 Garlic cloves
  • 6 Spoons of clarified butter or olive oil
  • 1 Egg white
  • Salt


  • First thing to do is removing all the fat around the meat and a good cleaning of the bone scraping the surface in order to remove the cartilage that surrounds it.
  • Remove now the final part of bone (the one attached to the meat) helping with a knife to obtain a morsel of tender lamb attached to a thin cutlet.
  • Coarsely chopped the pistachios ,then put in a bowl the bread crumbs, the pecorino cheese, the chopped parsley, a big pinch of salt, and crushed garlic, mix the ingredients well. Dip the chops in the white, cover the entire surface of the meat with the mixture then coat pressing well on all sides, in order to obtain a uniform breading.
  • Melt in a pan the clarified butter and fry the meat on both sides.
  • Serve hot with a salad or baked potatoes
