Shrimps on chickpea puree

Ingredients:
- 18 Shrimps.
- 250 gr. of chickpeas.
- 1 Garlic clove.
- 1 Sprig of Rosemary.
- Olive oil
- Salt and pepper.
Method:
- Soak the chickpeas overnight and cook them in salty water with the garlic and the rosemary.
- When done, drain them and keep the cooking water (see next step).
- In a food processor reduce the chickpeas (save some to garnish) in a puree using the water to adjust the thickness.
- Add some salt, pepper and olive oil to taste.
- Clean the shrimps from the shell and the intestine (black bowel along the back).
- Either steam-cook the shrimps or fry them with salt and ground pepper.
- Serve putting the puree on a dish and the shrimps on top.
- Garnish with a little sprig of rosemary and some whole chickpeas.
