Anchovy gratin

Ingredients:

  • 500 gr. of fresh Anchovy.
  • 100 gr of breadcrumbs.
  • 1 tuft of parsley.
  • 1 Garlic clove.
  • Extra vergin olive oil.
  • Salt and pepper.

Method:

  • Clean the anchovies removing the head and the guts.
  • Wash them under cold water, removing the bone.
  • Open them like a booklet and dry them with some blotting paper.
  • Oil a baking pan, put the fish in it and spread the mixture on top (to cover).
  • Bake (180°) for about 10-15 minutes
  • Garnish with some fresh parsley.
