Anchovy gratin

Ingredients:
- 500 gr. of fresh Anchovy.
- 100 gr of breadcrumbs.
- 1 tuft of parsley.
- 1 Garlic clove.
- Extra vergin olive oil.
- Salt and pepper.
Method:
- Clean the anchovies removing the head and the guts.
- Wash them under cold water, removing the bone.
- Open them like a booklet and dry them with some blotting paper.
- Oil a baking pan, put the fish in it and spread the mixture on top (to cover).
- Bake (180°) for about 10-15 minutes
- Garnish with some fresh parsley.
