Spaghetti with clams

  • 320 gr. of spaghetti
  • 1 Kg. of fresh clams
  • 1 garlic clove
  • 1 sprig of parsley
  • 1/2 glass of white wine
  • 4-5 tablespoon of extra vergin olive oil


  • Cook the spaghetti in salty water.
  • Scrub the clams and let them sit in salty cold water for 1 hour, then change the water and let them be for another hour.
  • In a large pan warm the olive oil, add the garlic and the clams and cook for 2-3 minutes on a very high fire.
  • Add the wine, cover and cook for 4-5 minutes or until the clams are completely open.
  • Sprinkle the chopped parsley, transfer the drained spaghetti in the pan with the calms and sautè for 2 minutes.
