Risotto with zucchini

Ingredients:

  • Risotto (make it as shown here without the saffron)
  • 1 zucchina
  • Parsley
  • Olive oil
  • Salt and pepper

Method:

  • Clean and cut the zucchina.
  • Saute the zucchina in a drop of olive oil, and cook it for 4-5 minutes.
  • Remove from the fire when still crunchy.
  • Season with salt and pepper and some chopped parsley.
  • Add to the risotto fve minutes before it is cooked.
  • Serve hot.
