Risotto with smoked scamorza cheese and treviso salad

  • 300 gr. Rice.
  • 100 gr. Scamorza cheese.
  • 120 gr. Treviso salad.
  • White wine 1/2 glass.
  • 1 Lt. Beef broth.
  • Butter.


  • Chop very finely the onion and cook it on a very low fire with 20 gr. of butter.
  • After 3-4 minutes add the rice and toast it for a minute stirring with a wooden spoon.

When you cannot hold anymore the rice between your finger tips it means the rice is toasted right.

  • Add the white wine and let it evaporates.
  • Cook adding the broth one ladle at the time, stir continuously and when the rice is half way cooked add the treviso salad.
  • When the rice is done take out from the fire and whisk with the scamorza cheese and some butter.


Scamorza is an Italian cow's milk cheese, similar to mozzarella. It can also be made from other milks, but that is less common. Smoked Scarmorza (scamorza affumicata) Scamorza is a plastic (or stretched) curd cheese, in which the fresh curd matures in its own whey for several hours to allow acidity to develop by the process of lactose being converted to lactic acid. Artisanal cheesemakers would generally form the cheese into a round shape, and then tie a string around the mass one third of the distance from the top, and hang to dry. The resulting shape is pear-like. This is sometimes referred to as "strangling" the cheese. The cheese is usually white in color unless smoked. When smoked, the color is almond with a lighter interior.
