Seafood rice

Ingredients:
- 250 gr. seafood (a mix of shrimps,squid,octopus,clams,mussels)
- 1 Lt. fish stock
- 350 gr. rice.
- Extra vergin olive oil.
- Parsley.
- Garlic.
- White wine.
- Salt and pepper.
Method:
- Soak the clams in salted water for approx. 2 hours to remove sand.
- Place the clams and the mussels in a large pan with 3 table spoons of olive oil, 1 clove of garlic and half glass of dried white wine. Cover and let the clams and the mussels open (it will take 5 to 7 minutes). Keep apart.
- Meanwhile clean the rest of the fish and gently fry it in 3 table spoon of oil and a clove of garlic. Keep apart.
- Prepare the rice as shown here (but no parmesan cheese, no zucchini,no saffron and the stock should be fish stock).
- 3-4 minutes before the rice is cooked add the fish, the clams and the mussels (shelled if you prefer).
- Finish cookink the rice, sprinkle with som chopped parsley and a generous grinding of pepper and serve.
