Pesto and zucchini pasta

  • 320 gr. of "short" pasta (any)
  • 4 zucchini
  • 140 gr. of pesto sauce
  • 40 gr. of pecorino cheese (grated)
  • Olive oil
  • Salt and pepper


  • Clean the zucchini and cut them into pieces the same size of the pasta you are using.
  • Put them in a strainer, add some salt and let them for 1/2 an hour to drop some of their water.
  • Wash from the salt and dry them.
  • Put the zucchini into a pan with 4 tablespoon of olive oil and cook on a very hight flame for 3-4 minutes, add 6-7 spoon of water, cover and let them cook for 5 minutes(leave them crunchy).
  • Cook the pasta in boiling salty water and when ready mix it with the pesto sauce.
  • Add to the zucchini and stir fry for a couple of minutes.
  • Sprinkle the cheese and serve.
