Spaghetti "carbonara"

Ingredients:
- 400 gr. of Spaghetti or Linguine
- 150 gr. of unsmoked hog jowl or bacon or pancetta.
- 3 Eggs.
- 30 gr. of Pecorino cheese.
- 1 Garlic clove.
- Olive oil.
- Salt, pepper.
Method:
- In a pan heat a tablespoon of olive oil, let the garlic brown and then remove it.
- When done remove the pan from the fire and keep it apart.
- Dice the pancetta and add it to brown (not too much, it should stay tender).
- In a bowl beat the eggs with the pecorino cheese freshly ground pepper.
- Cook the spaghetti in salty water and when ready (al dente) drain them very well, transfer in the pan with the pancetta and put it back on the fire.
- Let them heat for a moment and then pour the pasta in the bowl with the eggs.
- Mix well and quickly and serve still hot.
