Spaghetti "carbonara"

  • 400 gr. of Spaghetti or Linguine
  • 150 gr. of unsmoked hog jowl or bacon or pancetta.
  • 3 Eggs.
  • 30 gr. of Pecorino cheese.
  • 1 Garlic clove.
  • Olive oil.
  • Salt, pepper.


  • In a pan heat a tablespoon of olive oil, let the garlic brown and then remove it.
  • When done remove the pan from the fire and keep it apart.
  • Dice the pancetta and add it to brown (not too much, it should stay tender).
  • In a bowl beat the eggs with the pecorino cheese freshly ground pepper.
  • Cook the spaghetti in salty water and when ready (al dente) drain them very well, transfer in the pan with the pancetta and put it back on the fire.
  • Let them heat for a moment and then pour the pasta in the bowl with the eggs.
  • Mix well and quickly and serve still hot.
