Potatoes and Leeks soup

Ingredients:
- 600 gr. of Potatoes.
- 300 gr. of Leeks.
- 40 gr. of Butter.
- 1 Lt. of Broth. (the soup cubes are ok)
- 10 Cl. of Fresh cream.
Method:
- Clean the vegetables, cut the potatoes in cubes and the leek in thin stripes.
- Brown the leek in butter, after 2-3 minutes add the potatoes,the broth and a pinch of salt (taste before, usually the soup cubes are salty).
- Cook on a low fire for 30 minutes and when the potatoes are soft enougth mix in a food processor to make a thick cream.
- Put back on the fire, add the fresh cream and when the soup is soft and creamy it will be ready.
- Garnish with some leek, season with the pepper and serve.
- If you like it you can serve it with some croutons.
