Homemade Pizzoccheri

Ingredients:

  • 400 gr. of buckwheat
  • 100 gr. of white flour
  • Water

Method:

  • Mix the two types of flour.
  • Knead with some water for 5-7 minutes.
  • Roll the dough 2-3 mm. thick.
  • Cut in stripes about 7-8 cm.
  • Overlay the stripes and cut sideways obtaining noodles 5 mm. wide.
  • Cook immediately in salty boiling water.
