Ingredients:

  • 250 gr. all purpose flour.
  • 150 gr. Butter (room temperature)
  • 80 gr. Sugar.
  • 2 Eggs yolks
  • 1/2 Lemon.5 gr.
  • 1 pinch of salt (if don't use the salted butter)
  • 1/2 teaspoon of vanillin.

Method:

  • Sift the flour and pour it on the table (pict.1)
  • Add the lemon zest, the salt (if you are not using salted butter), the vanillin (pict.2)
  • Add the butter and mix quickly with your fingertips (pict.3).The consistency should be like sand.
  • Add the sugar and the yolks. (pict.3)
  • Incorporate very well but with a very short mixing.(pict.4).
  • Make a ball, wrap it in a plastic film and let it rest in the fridge for al least one hour.
