Tradition has it that Italian pasta is homemade, of course the pasta you buy in shops is very good especially the one from Gragnano (a small town in the south) but nothing is equal to our fresh pasta made only with eggs and flour. Here, the traditional recipe. Try it, it's easy, very cheap but most of all very good. The rule is: 100 gr. of flour, 1 egg

 

Ingredients for 1 kg. of pasta:

  • 800 gr. Flour
  • 200 gr. of Semolina flour.
  • 8 Eggs
  • 10 gr. of salt.

Method:

  • Sift flours and put them on a board like in the picture.
  • Put in center the eggs,the salt and start mixing the ingredients.
  • Mix hard until you have a very compact and smooth dough.
  • Wrap it in a plastic film and let it "rest" for 30 minutes in the fridge.
  • The pasta is ready, now you just have to roll it about 1 mm. tick and cut it in the shape you like.
