Homemade couscous

  • 320 gr. of semolina
  • Water
  • 1 glass of extra vergin olive oil


  • Pour slowly slowly the semolina into a large bowl adding some water mixing (in a circular way and with your fingers)
  • Do this until the semolina is nice and puffy.
  • Put it on a clean cloth and let it dry for a couple of hours.
  • Put it back into the bowl and add the olive oil, mix continuosly until the semolina has completely absorbed it.
  • Steam cook the semolina for 1 hour.
  • If you want you can use broth instead of the water to steam cook the couscous, or you can add some flavours to the water like laurel leaves, onion, cinnamon, cloves etc.
