Pasta choux (bigne')

Ingredients:
- 150 gr. all purpose flour.
- 4 Eggs.
- 120 gr. Butter.
- 2,5 Dl. of Water.
Method:
- In a pan warm the water with the butter and a pinch of salt.
- When the water starts boiling take the pan out of the fire, pour the flour and mix quickly with a wodden spoon.
- Put the pan again on the fire and cook, stirring, until the mix detaches from the bottom.
- Now turn off the fire and add slowly slowly the eggs (very well beaten) stirring until the pasta is perfectly mixed.
- When finished put the mix in a piping bag and form balls (the size you like) on a baking pan (use some baking paper).
- Bake for 15 minutes (200°).
This "pasta" is very neutral in flavour and taste, use it stuffed either with sweet mixes (like creams,custard,chocolate mousse) or soft cheese,smoked salmon etc.
