Salmon terrine

Ingredients:
- 250 gr. of smoked salmon
- 250 gr. of robiola cheese
- 100 gr. of vegetables (carrot,leek and zucchini)
- 15 gr of isinglass
- Milk
- Salt
- White peppercorn
Method:
- Dice the vegetables and boil them for 2-3 minutes in salty water.
- Drain them and let them dry on blotting paper.
- Soften the isinglass in cold water, and then melt it in a couple of spoons of milk.
- Into a bowl mix the cheese, the isinglass, the vegetables and some grounded pepper, salt to taste.
- Cover with some plastic film the internal of a mould (it will help to extract the terrine) then coat with the sliced salmon which will overflow to pack and close properly.
- Pour a layer of the mix (cheese and the vegetables), some slices of salmon and finish with another layer of cheese.
- Close with the salmon which overflows and refrigerate for 6 hours before serving.
