Salmon terrine

  • 250 gr. of smoked salmon
  • 250 gr. of robiola cheese
  • 100 gr. of vegetables (carrot,leek and zucchini)
  • 15 gr of isinglass
  • Milk
  • Salt
  • White peppercorn


  • Dice the vegetables and boil them for 2-3 minutes in salty water.
  • Drain them and let them dry on blotting paper.
  • Soften the isinglass in cold water, and then melt it in a couple of spoons of milk.
  • Into a bowl mix the cheese, the isinglass, the vegetables and some grounded pepper, salt to taste.
  • Cover with some plastic film the internal of a mould (it will help to extract the terrine) then coat with the sliced salmon which will overflow to pack and close properly.
  • Pour a layer of the mix (cheese and the vegetables), some slices of salmon and finish with another layer of cheese.
  • Close with the salmon which overflows and refrigerate for 6 hours before serving.
