Vegetables Quiche

For the filling

  • 200 gr. of Brisče pasta (to make it follow this link)
  • 2 Leeks.
  • 2 Zucchine.
  • 4 Cl. Olive oil.
  • 80 gr. of cheese (gruyere)
  • 40 gr. Parmesan cheese (grated).

For the royale

  • 2 Eggs.
  • 10 Cl. Milk.
  • 10 Cl. Fresh cream.
  • Nutmeg
  • Salt and pepper.


  • Clean and cut the vegetables.
  • Braise the leeks with a little oil,water sal and pepper until tender.
  • Saute the zucchine in a non stick pan with a little oil. Season with sal and pepper.
  • Cut in small cubes the gruyere.
  • Beat the eggs with the milk and the cream, season with salt pepper and a pinch of nutmeg. (Royale)
  • Roll the dough (brisče) and line a bakink tin (i've used single portions).
  • Fill with the vegetables and the cheeses
  • Fill the "cake" with the royale.
  • Bahe (180°) for 30 about minutes.
  • Serve hot or cold as you wish.
