Ingredients:
- 850 gr. of peaches
- 250 gr. of milk
- 200 gr. of cream
- 70 gr. of sugar
- 15 gr. of flour
- 10 gr. of pine nuts
- 3 egg yolks
- 1 lime
- cane sugar
Method:
- Peal the peaches, cut them in half and sprinkle with the cane sugar.
- Cook them under the grill of the oven for 20 minutes then mix in a blender.
- Beat the egg yolks with the sugar and add the flour continue to beat until it is soft and smooth.
- Grate the lime zest, add it to the milk and bring it to boil.
- Take part (obout one glass) of the boiling milk and mix it well with the eggs, then pour back the entire egg mixture into the milk and cook for 3-5 minutes from when the milk starts boiling again.
- Whip the cream and keep it in the fridge.
- Toast in a small pan the pine nuts.
- When the milk and egg cream is completely cold add the whipped cream.
- Fill half of the glasses with the peaches, complete with the mousse, decorate with some toasted pine nuts and a slice of peach and serve cold.
