Peach jellies

Ingredients:
- 4 peaches
- 1 tablespoon of sugar
- 1/2 lime juice
- 4 gr. of agar agar
- Mint to garnish
Method:
- Peel the peaches and cut them in pieces
- Cook them with the sugar and a 3-4 tablespoons of water in a small pan on a very low fire.
- When done reduce the fruit into a pulp using a food processor.
- Add the agar agar and let it boil for 10 15 seconds.
- Pour in the moulds and let it cool down.
- Garnish with the mint and serve very cold.
