Chocolate ganache tart and salty caramel

Ingredients for the ganache:
- 150 gr. fresh cream.
- 300 gr. milk chocolate.
Ingredients for the caramel:
- 150 gr. sugar.
- 1 Dl. water.
- 1,5 Dl. Fresh cream.
- 70 gr. Salty butter.
Method:
- Prepare the tart as shown here.
- To prepare the ganache boil the fresh cream and pour it hot on the chopped chocolate.
- Stir and mix well until smooth.
- Pour the ganache in the tart (cold)
- Prepare the caramel by heating over a low flame and a thick-bottomed saucepan the sugar with water until the sugar is dissolved.
- Then increase the heat until the syrup will become golden (do not make it too dark, the taste of caramel is entirely up to this stage).
- Remove from heat and, being careful to sketches, add cream and butter. Place on low heat and cook, stirring for 5 minutes. Allow to cool and pour on the curdled caramel ganache.
- Serve it if you like with some vanilla sauce
