Frangipane and apple roses tart

  • For the pastry:
  • 150 gr. flour.
  • 150 gr. butter.
  • 100 gr. spelt flour
  • 70 gr. sugar
  • 2 egg yolks
  • Salt.
  • For the Frangipane:
  • 75 gr pistachios.
  • 75 gr. sugar.
  • 70 gr. butter.
  • 40 gr. yougurt
  • 1 egg.
  • Salt.
  • For the apple roses:
  • 1 Kg. red apples
  • 350 gr. sugar.
  • 700 gr. water.


  • Pastry:
  • Mix all the ingredients and a pinch of salt, in the end add the egg yolks.
  • Mix until smooth and when the dough is done wrap it in a plastic film and let it "rest" for at least one hour.
  • Frangipane:
  • About 15 minutes before rolling the dough, mix the pistachios and the sugar and grind in the food processor (in the end it should be like flour), soften the butter and mix it well with the yougurt then add them to the pistachios flour, add the egg and mix it until smooth and creamy (this you can do in the mixer).
  • Apple roses:
  • Boil the water with the sugar.
  • Cut the apples, without peeling them, in very thin slices (use a slicer), cook them in the water for one minute, drain them and let them cool down.
  • Cut the slices in half and use 3-4 to form the rose.
  • Praparation for the oven:
  • Roll the dough about 3-4 mm. thick and place it in a baking pan (about 26 cm.of diameter),make a thick border and pour the frangipane (it should be about one cm below the rim), bake (170°) for about 35 minutes.
  • When the tart is cooked take it out from the oven and let it cool for a few minutes then fill it with the apple roses.
  • Sprinkle with powdered sugar and put il back in the oven (same temperature) for 5 minutes.
  • Decorate with icing sugar and grinded pistachios.
