White chocolate mousse, oranges and sesame hardbake

Ingredients:
- 300 gr. of White chocolate.
- 2 dl. of Fresh craem.
- 0,5 dl. of Rum.
- 1/2 Vanilla bean.
- For the sesame hardbake:
- 250 gr. of sugar
- 50 gr. of White sesame seeds
- 50 gr. of Black sesame seeds
- 100 gr. of Pistachio (chopped)
- a bit of oil
- For the caramelized oranges:
- 2 Oranges
- 100 gr. of sugar
- 0,2 dl. of Gran Marnier (or similar)
Method:
- In a small pan prepare the caramel with 250 gr of sugar, a bit of water and a teaspoon of lemon juice. (never stir)
- As soon as the caramel will turn little brown, add the sesame seeds and the pistachio and turn off the fire. Stir well.
- Spread the hot caramel on a lightly greased (with oil) board.
- Let it cool a bit and then while still warm cut it in stripes.
- Peel the oranges cut slices through the white thin skin.
- In a small pan put the oranges, the sugar (100 gr.) and the Gran Marnier to caramelize for a few minutes until the sauce will be light brown.
- Warm the fresh cream with the seeds of the vanilla bean, add the chocolate, stir until it is completely melted, add the rum.
- Serve in a glass placing on the bottom the chocolate mousse, an top the caramelized oranges and garnish with the sesame hardbake.
- Serve room temperature.
