Potatoes "duchessa"

Ingredients:

  • 500 gr. of Potatoes.
  • 2 Yolks.
  • 40 gr. of Parmesan cheese (grated).
  • Nutmeg (grated).
  • Salt and pepper.

Method:

  • Cook the potatoes in boiling water.
  • Peel and mash them.
  • Add the two yolks, the parmesan cheese,the butter,sal,pepper and a pinch of nutmeg.
  • Mix very well, put the mixture in a piping bag and, on a buttered baking pan, pour in the shape of a flame.
  • Bake (200°) for a few minutes.
  • Serve hot.
