Baked potatoes

  • 800 gr of potatoes
  • 1 sprig of rosemary
  • 1 garlic clove
  • 6 spoons of extra vergin olive oil
  • Salt


  • Clean andd peel the potatoes
  • Cut them in cubes (about 1,5 c.m)
  • Boil the potatoes in water for not more then 1,5 minutes.
  • Drain them, spread them on a board and let them dry for a while.
  • Put the potatoes in a baking pan with the oil an the garlic (the entire clove) and bake (180°) for 40-45 minutes.
  • When the potatoes are cooked spread the rosemary leaves on top, salt and serve.

I use to boil the potatoes for 1-2 minutes before baking to take out the starch from them, doing so the potatoes will remain soft inside and crispy outside plus they will not stick to each other. I only add the rosemary at the end, and out of the oven not to make it bitter.
