Russian salad

Ingredients:
- 200 gr. of carrots
- 500 gr of potatoes
- 300 gr. of peas (the frozen are fine)
- 300 gr. of mayonnaise (for the homemade one see here)
- 1 tablespoon of white wine vinegar
- Olive oil
- Salt and pepper
Method:
- Clean the carrots and the potatoes, peel and dice them into little squares (about the size of a pea).
- Boil (or steam cook) the vegetables separately in salty water being careful to keep them littlr crunchy (it will take 7 to 10 minutes for the potatoes and 5 to 7 minutes for the paes and the carrots).
- When done drain and keep them into a strainer to let them dry.
- Place the vegetables into a bowl season with the olive oil, the vinegar, add the mayonnaise salt and pepper to taste.
- Keep the salad in the refrigerator for 1 hour before serving.
A nice idea to serve this salad could be:
- put it in a mould (previously lined with some plastic film).
- Refrigerate it and garnish with some boiled eggs and cucumber pikle.
