Fried mushrooms

Ingredients:
- 500 gr. of mushrooms (porcini is the best, champigno ok and cheapper)
- 40 gr. of butter
- 4 tablespoon of extra vergin olive oil
- 2 sprigs of parsley
- 1 Garlic clove
- Salt and pepper
Method:
- Clean (please do non wash them in water) with a soft cloth and cut the mushrooms.
- Into a large pan melt the butter with the oil and place the mushrooms to cook.
- Stir for a couple of minutes, cover the pan and cook until completely dry.
- Uncover the pan, add the chopped parsley, salt and pepper to taste.
- Serve hot or cold.
