Fried mushrooms

Ingredients:

  • 500 gr. of mushrooms (porcini is the best, champigno ok and cheapper)
  • 40 gr. of butter
  • 4 tablespoon of extra vergin olive oil
  • 2 sprigs of parsley
  • 1 Garlic clove
  • Salt and pepper

Method:

  • Clean (please do non wash them in water) with a soft cloth and cut the mushrooms.
  • Into a large pan melt the butter with the oil and place the mushrooms to cook.
  • Stir for a couple of minutes, cover the pan and cook until completely dry.
  • Uncover the pan, add the chopped parsley, salt and pepper to taste.
  • Serve hot or cold.
